Quinoa is an Andean plant originally from Peru and Bolivia. In addition to being a complete protein, quinoa provides more iron, fibre, magnesium and zinc than many grains. Quinoa is delicious as a rice substitute or made into a nourishing quinoa salad.
How to cook: Rinse thoroughly by running under fresh water for 3 minutes. Place 1 cup grain and two cups water in a saucepan. Bring to a boil, cover, and reduce to simmer, stirring occasionally for 7 to 10 minutes.
