Navy beans are especially popular in France and Anglo-America, appearing in such traditional dishes as baked beans, as well as soups (especially minestrone) and chili. They are closely related to the kidney bean and can also be substituted for Great Northern, Baby Lima beans, or Cannellini beans in many recipes.
How to Cook: Rinse 1 cup beans. Pour into boiling water and cover. Soak overnight, at least 6 hours. Drain and discard soaking water. Add 4 cups fresh water & simmer over low heat until tender, approximately 45 minutes to 1 hour.
How to Cook - Instant Pot or Pressure Cooker: Put navy beans, water and salt in the Instant Pot. Close the lid and turn the valve to a sealing position. Press the "Pressure Cook" or "Manual" button and set the time to 25 minutes on High pressure and let release naturally.
